    Saucy Salted Eggs With Shrimps

    You'll Need
    2 tsp chopped garlic
    1 medium onion, chopped
    1/4 kg medium shrimps, shelled
    1 can (140 g) DEL MONTE Tomato Sauce
    3 pieces salted eggs, peeled
    10 pieces hard boiled quail eggs, hard boiled and peeled

    Here's How
    1 SAUTÉ garlic, onion and shrimps. Add DEL MONTE Tomato Sauce and simmer for 1 minute.

    2 ADD salted eggs and quail eggs. Season with salt to taste. Simmer for 3 minutes. Slice salted eggs in half and return to pan. Serve hot.

    ** Serves 5
    ** Excellent source of Vitamin A

    FLOURLESS CHOCOLATE CAKE

    this has been a favorite of mine, the best one i have tried of this kind of cake is at TSAI and Dessert Factory... Enjoy

    300 gm bittersweet chocolate, grated
    ½ cup Baker's Best Margarine
    7 pcs eggs, medium
    ¾ cup sugar
    2 tsp rum or Kahlua

    Butterscotch Sauce
    2/3 cup brown sugar
    ½ cup all-purpose cream
    2 tbsp Baker's Best Margarine
    1 tbsp light corn syrup
    2 tsp instant coffee
    2 tsp rum or Kahlua (optional)

    Strawberry Coulis
    ½ cup puréed strawberries
    ¾ cup all-purpose cream
    3 tbsps light syrup

    instructions:

    Preheat oven to 375°F, grease , line, grease a 9" pan. Melt chocolate and Baker''s Best margarine over low heat, keep warm. Separate eggs, beat egg yolks and ½ cup sugar until light colored. Beat in chocolate mixture. Add rum and set aside. Beat egg whites with ¼ cup sugar until stiff. Fold beaten egg whites into the chocolate mixture. Bake at 375°F for 15 minutes, lower heat to 350°F and bake for 15 minutes. Lower heat again to 325°F and bake for 30 minutes or until a cake tester comes out clean. Top will have cracks, loosen edges with a spatula and let cool or chill for about 4 hours before serving. Serve and drizzle with butterscotch sauce or strawberry coulis, or just sift confectioner''s sugar over the top.{Butterscotch Sauce:} Mix all ingredients in a saucepan and cook over medium heat until thick or mixture coats a spoon.{Strawberry Coulis:}Whisk together all ingredients in a bowl to achieve a smooth consistency. Chill.

    Creamy Carrot Soup

    You'll Need
    2 Tbsp margarine
    5 Tbsp flour
    1 pc beef bouillon cube
    1 can (158 ml) evaporated milk
    5 cups water
    3 medium (350 g) carrot
    1 can (140 g) DEL MONTE Tomato Sauce
    2 stalks green onion, chopped

    Here's How
    1 BOIL 2 carrots until tender. Peel and mash. Cut remaining carrot into small cubes. Set aside.

    2 HEAT margarine in pan. Add bouillon cube and flour, then stir. Add combined milk and water gradually, stirring until well blended. Add cubed carrots. Simmer for 10 minutes.

    3 ADD DEL MONTE Tomato Sauce, mashed carrots, cheese, 1/3 tsp. iodized fine salt (or 1 tsp. iodized rock salt) and 1/4 tsp. pepper. Cook for another 10 minutes. Top with green onions.

    Special Kilawin

    You'll Need
    3/4 k fresh maya-maya, filleted and cubed
    1/4 cup calamansi juice
    1/4 cup DEL MONTE Red Cane Vinegar
    1 can (439 g) DEL MONTE Pineapple Tidbits (reserve 2 Tbsp syrup)
    2 pcs (100 g) bell peppers, cut into squares
    1 medium (50 g) onion, chopped
    2 pcs siling labuyo, sliced
    1 tsp ginger juice
    2 cloves garlic, minced
    2 Tbsp DEL MONTE Red Cane Vinegar

    Here's How
    1 SOAK fish in calamansi juice and 1/3 tsp. iodized fine salt (or 1 Tbsp. iodized rock salt) for 30 minutes. Drain. Soak again in DEL MONTE Vinegar for 30 minutes. Drain.

    2 COMBINE fish with the remaining ingredients. Chill until ready to serve.

    ** Serves 6
    ** High in Vitamin B12

    Cheesy Eggplant Layers

    You'll Need
    4 medium (600 g) eggplants, each cut lengthwise into 4 slices
    1 pc egg, lightly beaten
    1/2 cup breadcrumbs
    1 Tbsp sugar
    1 can (237 g) DEL MONTE Italian Style Spaghetti Sauce
    1 cup cheese, grated
    1 medium (50 g) green bell pepper, diced

    Here's How
    1 COMBINE eggplant and egg. Mix well. Coat each slice with breadcrumbs. Fry until golden brown. Set aside.

    2 PRE-HEAT oven to 350°F.

    3 ADD sugar, 1/8 tsp. pepper and 2/3 tsp. iodized fine salt (or 2/3 Tbsp. iodized rock salt) to DEL MONTE Spaghetti Sauce. Arrange 8 eggplant slices on an 8" x 8" baking dish. Pour half of sauce over eggplants and top with half of cheese and bell peppers.

    4 REPEAT procedure using the remaining ingredients. Bake for 25 minutes. Let stand for 5 minutes before serving.


    **Serves 8
    **Low in Cholesterol

    Pork Roll Mechado

    You'll Need
    1/2 kilo pork pigue
    50 grams pork fat, cut into 4 strips
    1 small carrot, cut into 6 strips
    1 pc whole pickle, cut into 6 strips
    5 pcs sibuyas Tagalog, halved
    1 pouch (200 g) DEL MONTE Classic Mechado-Caldereta Recipe Sauce
    2 medium potatoes, cut into chunks

    Here's How
    1 SLICE pork pigue thinly in just one piece (morcon style). Spread on chopping board and pound lightly to flatten surface. Sprinkle with 1/3 tsp iodized fine salt (or 1/3 tbsp iodized rock salt) and 1/8 tsp pepper.

    2 ALTERNATELY arrange strips of pork fat, carrot, pickles and sibuyas Tagalog. Roll and tie firmly with crocheting thread. Rub surface with dash of iodized salt, then brown in oil. Add 1 cup water, then simmer over low heat until meat is tender.

    3 ADD potatoes. Season to taste. Simmer until potatoes are cooked. Add DEL MONTE Classic Recipe Sauce. Simmer for 10 minutes. Remove thread and slice before serving.


    ** Serves 5
    ** Excellent source of Niacin

    Chicken Samba

    You'll Need:
    700 g chicken breast, deboned and cut into cubes
    1/4 cup margarine
    1 pc onion, sliced
    1 pc chorizo de bilbao, sliced (optional)
    1/2 cup Vienna sausage, sliced
    1 can (227 g) DEL MONTE Tomato Sauce
    150 g potato, cubed and fried
    1 pc small carrot, sliced
    1 cup cooked green peas
    1 pc bell pepper, cut into strips
    2 tbsp grated cheese (optional)

    Here's How:

    1. Marinate chicken in 1 tbsp soy sauce, 1/3 tsp iodized fine salt (or 1 tsp iodized rock salt) and 1/4 tsp pepper for one hour. Stir-fry chicken meat in margarine until slightly brown. Set aside.

    2. Sauté onions. Add chicken, chorizo de bilbao, Vienna sausage, DEL MONTE Tomato Sauce and 1 cup water. Season with salt and pepper to taste. Simmer for 5 minutes.

    3. Add vegetables. Continue simmering until cooked. Top with grated cheese.


    MAKES 6 SERVINGS.

    P 25.45 per serving
